A microbrewery has become the first in Ishikawa Prefecture to enter whisky production.
The distillery has already obtained its production license and began filling casks in August 2022.
Using locally sourced ingredients, it is aiming to release its whisky in 2025.In addition to barley, the whisky uses locally produced white rice bran, a byproduct of polishing rice for daiginjo sake.
For the cask heads, Noto Hiba wood, known for its fresh, hinoki-like aroma, is used.
Looking ahead, the distillery plans to cultivate its own barley by leasing nearby fallow farmland.
